Why does bold text work where formatting is stripped?

Because it isn't formatting. Each bold letter is its own Unicode character (from the mathematical symbols block), so platforms treat it as ordinary text.

Will screen readers handle it well?

Not always โ€” some read each mathematical letter awkwardly or skip words. Use it for short accents, not whole paragraphs, if accessibility matters.

Why do accented letters stay normal?

Unicode's mathematical block only covers Aโ€“Z and digits, so รฉ or รฑ have no bold counterpart and pass through unchanged.
